Apricot Banana Bread

Ingredients
- 1/3 cup Butter
- 2/3 cup Sugar
- 2 large Eggland’s Best eggs
- 1 cup Bananas (1 large or 2 small bananas)
- 1/4 cup Buttermilk
- 1 1/4 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup 100% Bran Cereal Post
- 3/4 cup Dried Apricots
- 1/2 cup Chopped Walnuts
Preparation
1. In a mixing bowl, cream butter and sugar.
2. Add eggs; mix well.
3. Combine bananas and buttermilk.
4. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture.
5. Stir in bran, apricots and nuts.
6. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan.
7. Bake at 350 degrees for 55-60 minutes or until bread tests done. Cool 10 minutes before removing from pan to a wire rack.
