For this elegant Millesimato, we paid close attention to every detail, from the hand-harvested grapes to the prolonged rest on the lees, taking you back through our 130 years of winemaking history. This limited edition celebrates the winery’s values and iconic style that have been a part of our DNA since 1887.

VINIFICATION:
To make this refined brut nature sparkling wine, the fruit of Mionetto’s lengthy winemaking expertise, the white grapes are gently pressed and the must immediately fermented; the wine then receives its secondary fermentation following the Charmat method during which the wine rests on the lees for up to 3-4 months.

ALCOHOL:
11% Vol.

TOTAL ACIDITY:
5.5 - 6 g/l.

SUGAR LEVEL:
0 - 3 g/l.

SERVING TEMPERATURE:
6° - 8° C.

SENSORY PROFILE:
Meticulously produced with grapes hand-picked in the long standing vineyards from the Valdobbiadene Prosecco Superiore DOCG area, which make this wine the finest expression possible of the Glera grape. This elegant sparkling wine appears a distinctive, luminous straw yellow with green hues and with a long-lasting bead of pin-point bubbles. Fruit forward and elegant on the nose and still true to the grape’s character with intense notes of apple and citrus fruits. Its fruity notes are also found on the palate with a balanced acidity. A limited edition with no residual sugar that is pleasantly dry on the palate.

FOOD PAIRINGS:
It is ideally paired with shellfish, raw seafood, caviar and salmon or fried shrimp dishes.
